Thin-cut beef rib steak (often sold at kosher butchers as Thin Ribeye, Minute Rib Steak, or Sandwich Steak) is a highly marbled, bone-in or boneless cut taken from the rib section of the beef. Typically sliced between ½ to ¾ inch thick, this cut possesses the same rich eye of meat and buttery intramuscular fat as a thick-cut ribeye, but it cooks in a fraction of the time.
