Stuffed chicken helzel is an iconic Ashkenazi Jewish comfort food. Historically a zero-waste delicacy, it features a pouch made from a chicken's neck skin that is sewn up, stuffed with a rich mixture of flour or matzo meal, schmaltz (rendered chicken fat), and fried onions, and then roasted or slow-simmered. Because the filling absorbs all the rendered chicken fat, it expands into a decadent, savory "false kishke" with a crackly outer skin.
